A worldwide transition to healthier diets, improved agricultural efficiency, and significant reductions in food waste could fundamentally reshape global farming practices and land use by 2050, according to new modeling research.
The study projects a potential 6% decrease in global farmland use compared to current trajectories, alongside an estimated $630 billion decline in livestock production value from 2020 levels. This transformation would prioritize sustainable food production while addressing environmental and health challenges.
Transition to Plant-Centric Production
Ruminant livestock sectors—such as beef cattle, sheep, and goats—would face the most drastic changes, with their global value dropping by 70% ($274 billion) and approximately 400 million fewer animals by 2050. In contrast, plant-based production would surge, with combined global value for vegetables, fruits, nuts, and legumes rising by 57% ($890 billion). Legumes, including beans, peas, and lentils, offer high protein and fiber yields while requiring fewer resources than animal-based products.
Environmental and Public Health Gains
The research, published in Nature by teams from the London School of Hygiene & Tropical Medicine, Cornell University, and 10 independent modeling groups, aligns with the 2025 EAT-Lancet Commission’s vision for sustainable food systems. The analysis suggests that adopting healthier diets globally could prevent 15 million premature deaths annually. Additionally, agriculture-related net-CO2 emissions from land-use changes—such as deforestation and grassland conversion—could fall by 85% compared to 2020 levels, accounting for both emissions released and carbon sequestered through land management.
Economic and Social Implications
The study underscores that such a transformation would require major adjustments for farmers and food producers. Dr. Matt Gibson, the lead author, emphasized that while the shift offers substantial environmental and health benefits, it would disrupt existing agricultural systems. “Governments must act decisively to support this transition, balancing the needs of producers and consumers while challenging entrenched interests that benefit from the current system,” he said.
Regional Variations in Impact
The economic outcomes would diverge significantly across regions. In the U.S., total agricultural production value could drop by 21% ($76 billion), driven by a 73% ($116 billion) decline in livestock and a 20% ($40 billion) rise in crop production. India, however, might see a 46% ($198 billion) increase in agricultural value, with crop production growing 65% ($208 billion) and livestock declining modestly by 8% ($10 billion). Europe could face a 35% ($190 billion) reduction in total agricultural output, reflecting steep livestock declines (-66%, $168 billion) and smaller crop reductions (-8%, $22 billion).
These disparities stem from differences in farming practices, dietary habits, production costs, and land availability. The study notes that shifts toward plant-based diets are not without challenges, as affordability, cultural preferences, and accessibility barriers could complicate widespread adoption.
Need for Proactive Policy Planning
The scenarios presented are not predictions but exploratory models designed to guide policy. Researchers stress the importance of bold, early interventions to safeguard vulnerable communities and industries during the transition. “Without careful planning, the economic disruptions could exacerbate inequalities,” said Daniel Mason-D’Croz, a co-author from Cornell University. “Foresight modeling helps identify where support and investment are needed to ensure a just and sustainable transformation.”
