Applebee’s recently introduced its O-M-Cheese-adilla Burger, featuring a burger stuffed inside a quesadilla and served in a skillet of melted cheddar and queso. Golden Chick launched its own queso for just $1, while Freddy’s is highlighting its Baconfest, which features bacon layered onto cheese-covered tots and burgers through Nov. 3.

This gooey, cheesy trend is appearing across menus nationwide. Denny’s has rebuilt its entire burger lineup around American cheese, Panera has added a Three-Cheese Lasagna Soup to its fall offerings, and Qdoba is promoting a comprehensive “Diptember” campaign centered on 14 different dips and sauces, led by a new Queso Fundido.

What drives the widespread appeal of melted cheese? “Comfort and value remain the dual forces shaping American dining preferences today,” explains Dr. Chad Moutray, chief economist for the National Restaurant Association, whose 2026 What’s Hot Culinary Forecast highlighted comfort, value, and global flavors as the industry’s primary growth areas this year. Melted cheese satisfies both criteria—it provides familiar, hearty appeal that feels indulgent while remaining cost-effective to produce.
