Once a staple of pub fare, ploughman’s lunches and holiday spreads, the modest pickled onion is experiencing a resurgence as British shoppers develop a stronger taste for pickled foods.
Research from Worldpanel by Numerator shows that roughly 8.5 million UK households purchased pickled onions in the last year, with demand accelerating notably in recent months.
During the twelve‑week period ending early August, pickled onion sales climbed 12 % year‑on‑year, outpacing the 4 % rise seen across overall grocery. Price increases play a role, but underlying demand is also growing—about 300,000 extra households are now buying them, generating more than 550,000 additional shopping trips.
Pickles are increasingly stepping out of their classic supporting role and being used as standalone flavors and ingredients.
Michelin‑starred chefs are incorporating them into their menus, and this weekend sees the debut of London’s premier pickle and fermentation festival, the Big Brine.
James Goodyear, head chef at the Michelin‑starred Gordon Ramsay High, commented: “There’s a resurgence happening around pickling and preserving right now. Palates have evolved, so diners are naturally craving that sharp, mouthwatering punch of acidity and crunch to cut through richer dishes. Between social media demystifying the craft and a growing curiosity around gut health and natural fermentation, people are far more eager to explore beyond the basic supermarket jar.”
He noted that sustainability matters to diners, describing jars that ferment quietly on shelves as a smarter restaurant practice. He added: “It lets us celebrate every single part of an ingredient and completely rethink surplus.”
Molly Scanlan, a 39‑year‑old Londoner attending the Big Brine this weekend with her son, has spotted new pickle brands on supermarket shelves. She even saw a meal‑deal offering a plastic sachet of snacking cornichons.
Ocado reports that the pickles, gherkins and olives segment has risen 30 % year‑on‑year, with fresh pickled and fermented items up 16 %. Certain products show even sharper gains: raw organic ginger‑lemon sauerkraut jumped 393 %, Opies cocktail gherkins rose 305 %, Baxters sliced beetroot increased 246 %, and Epicure spicy crinkle‑cut pickles climbed 242 %.
Scanlan has enjoyed pickled foods since childhood; she notes that her son shares her enthusiasm and also likes kimchi.
While gherkins remain Scanlan’s longtime favorite, she observes a broadening interest in fermented foods, with kimchi and sauerkraut now more readily available. As she puts it, “you can pickle anything.”
Matt Harris, founder of the London‑based Pickle Project—which produces small‑batch, handcrafted pickles via an ultrasonic brining process—said he launched the brand to inject “energy and fun” into a sector he views as outdated. He added: “Despite pickles having ‘a moment’, the offerings on supermarket shelves remain largely traditional.”
Harris has rolled out flavors like deli dill pickle chips and is experimenting with ultrasound to draw out herb and spice notes during brining. The brand is now stocked by Ocado and Whole Foods Market, and Harris reports “huge growth” over the last nine months.
Kat Goldin, co‑founder of Goat Rodeo Goods, noted: “Over the past year our sales have grown roughly eleven‑fold, a tremendous increase for us.” She added: “This aligns with the broader ‘lipstick effect’ we’re observing—consumers may trim their grocery bills, yet they still seek a touch of luxury or something special for everyday meals. A quality condiment or pickle can elevate a simple sandwich or salad without requiring a major spend.”
The pickle boom is also giving rise to novel formats, including the UK’s first pickle‑infused sparkling water. In its debut week at Planet Organic, Yew sparkling water topped the retailer’s soft‑drink sales, even surpassing bottled water, and retailers say shoppers are specifically requesting the pickle flavor.
